Easy Chicken Quesadillas

Ingredients

The filling

  • 10 oz raw boneless skinless chicken breasts, chopped into small cubes
  • 2 tablespoons southwest or taco seasoning
  • 1 tablespoon canola oil
  • 4 oz 50% reduced fat sharp cheddar cheese, shredded
  • 8 tablespoons salsa

The base

  • 4 pieces Flatout Light Original Flatbreads

Instructions

  1. 1. Place the chopped chicken in a zip-top bag with the southwest seasoning, seal, and shake to coat.
  2. 2. Heat oil in a skillet over medium heat, add the chicken, and cook for 4-6 minutes until cooked through.
  3. 3. On a clean surface, place a Flatout flatbread and sprinkle ½ ounce of cheese over half of it.
  4. 4. Drizzle 2 tablespoons of salsa over the cheese and add ¼ of the cooked chicken, then sprinkle another ½ ounce of cheese on top.
  5. 5. Fold the flatbread over to form a quesadilla and repeat with the remaining ingredients.
  6. 6. Lightly mist both sides of the quesadillas with cooking spray and cook on a griddle or skillet for about 2 minutes on each side until golden and cheese is melted.
  7. 7. Cut each quesadilla into triangles and serve.
