Grilled Barbeque Onion and Smoked Gouda Quesadillas

Instructions
- 1. Preheat the grill to medium low heat.
- 2. Thinly slice the onions, chop the cilantro, and coarsely grate the Gouda cheese.
- 3. In a nonstick skillet, heat the olive oil and sauté the onions until almost soft.
- 4. Add the barbecue sauce and water, stirring until the onions are coated, then turn off the heat and add hot sauce to taste.
- 5. On each tortilla, spread a portion of the onion mixture, cheese, and cilantro, then fold in half.
- 6. Grill the quesadillas for about 2 minutes on each side until toasted and the cheese is melted.
- 7. Cut the quesadillas into thirds and serve with sour cream and salsa if desired.
