Grilled Barbeque Onion and Smoked Gouda Quesadillas

Ingredients

The filling

  • 3 tablespoons olive oil
  • 2 large yellow onions
  • ½ cup barbecue sauce
  • 2 tablespoons water
  • 1 teaspoon hot sauce (or to taste)
  • 6 to 8 ounces smoked Gouda cheese
  • cup chopped cilantro

The tortillas

  • 8 pieces flour tortillas

Instructions

  1. 1. Preheat the grill to medium low heat.
  2. 2. Thinly slice the onions, chop the cilantro, and coarsely grate the Gouda cheese.
  3. 3. In a nonstick skillet, heat the olive oil and sauté the onions until almost soft.
  4. 4. Add the barbecue sauce and water, stirring until the onions are coated, then turn off the heat and add hot sauce to taste.
  5. 5. On each tortilla, spread a portion of the onion mixture, cheese, and cilantro, then fold in half.
  6. 6. Grill the quesadillas for about 2 minutes on each side until toasted and the cheese is melted.
  7. 7. Cut the quesadillas into thirds and serve with sour cream and salsa if desired.
