Caramelized Onion, Spinach & Avocado Quesadilla

The tortillas

grapeseed oil or olive oil
Instructions
- Heat the oil in a large sauté pan over medium heat.
- Add the sliced onions and salt, cooking until soft and golden brown for about 30 to 40 minutes.
- Remove onions from the pan and set aside.
- In the same pan, add the spinach over low heat and cook until wilted, about 2 minutes.
- Remove spinach and wipe the pan dry.
- Increase heat to medium-low and place one tortilla in the pan.
- Sprinkle ½ cup of cheese on the tortilla, then add ¼ of the caramelized onions and ¼ of the wilted spinach.
- Heat until the cheese melts and the tortilla is crispy.
- Add avocado slices and fold the tortilla in half, cooking for another 30 seconds.
- Transfer the quesadilla to a cutting board, cut into fourths, and repeat with remaining ingredients.
