Caramelized Onion, Spinach & Avocado Quesadilla

Ingredients

The filling

  • 2 large yellow onions
  • ½ teaspoon salt
  • 10 ounces baby spinach
  • 2 cups shredded Monterey jack cheese
  • 2 large avocados

The tortillas

  • 4 large flour tortillas

The oil

  • 3 tablespoons grapeseed oil or olive oil

Instructions

  1. Heat the oil in a large sauté pan over medium heat.
  2. Add the sliced onions and salt, cooking until soft and golden brown for about 30 to 40 minutes.
  3. Remove onions from the pan and set aside.
  4. In the same pan, add the spinach over low heat and cook until wilted, about 2 minutes.
  5. Remove spinach and wipe the pan dry.
  6. Increase heat to medium-low and place one tortilla in the pan.
  7. Sprinkle ½ cup of cheese on the tortilla, then add ¼ of the caramelized onions and ¼ of the wilted spinach.
  8. Heat until the cheese melts and the tortilla is crispy.
  9. Add avocado slices and fold the tortilla in half, cooking for another 30 seconds.
  10. Transfer the quesadilla to a cutting board, cut into fourths, and repeat with remaining ingredients.
