Instructions
- Thaw the frozen spinach and drain it well to remove excess moisture.
- Slice the red onion, chop the roasted red pepper, kalamata olives, and parsley.
- Combine the spinach, red onion, roasted red pepper, kalamata olives, and parsley in a bowl.
- Add the oregano, crumbled feta, and shredded mozzarella to the bowl and mix thoroughly.
- Divide the filling among the tortillas, placing it on one half and folding the other half over.
- Heat a non-stick skillet over medium heat and cook the quesadillas until golden brown and crispy on both sides.
