Hummus Quesadillas

Ingredients

The quesadilla

  • 1 8-inch whole grain tortilla
  • ¼ to ⅓ cup hummus
  • handful sautéed spinach
  • to taste sun-dried tomatoes
  • to taste Kalamata olives
  • for brushing extra-virgin olive oil

Optional serving items

  • to taste additional hummus
  • to taste hot sauce
  • to taste pesto

Instructions

  1. Spread hummus over half of the tortilla and add your chosen fillings.
  2. Fold the tortilla to create a half-moon shape.
  3. Heat a skillet over medium heat and place the folded quesadilla in the pan.
  4. Cook for a couple of minutes, then flip and brush with olive oil.
  5. Cook until both sides are golden and crisp.
  6. Let the quesadilla rest for a few minutes, then slice into wedges and serve.
