Mozzarella, Basil and Corn Quesadilla

Ingredients

The filling

  • 1 whole tomato, chopped
  • cup corn
  • 4 leaves fresh basil, cut into ribbons
  • cup shredded mozzarella cheese
  • salt
  • pepper

The quesadilla

  • 2 tortillas
  • hummus optional

Instructions

  1. Mix chopped tomatoes with corn and salt in a strainer to allow juices to drip out.
  2. Press the mixture to remove excess moisture and stir in ¼ cup of cheese.
  3. Preheat a skillet or Panini press to medium-high heat.
  4. Spread hummus on one tortilla and top with the tomato mixture, remaining cheese, and basil leaves.
  5. Place the second tortilla on top and grill for a few minutes on each side until the cheese melts and the tortillas are toasted.
  6. For a crispier exterior, add butter or olive oil to the pan before grilling.
  7. Let cool for a few minutes, cut into wedges, and serve.
