Mozzarella, Basil and Corn Quesadilla

Instructions
- Mix chopped tomatoes with corn and salt in a strainer to allow juices to drip out.
- Press the mixture to remove excess moisture and stir in ¼ cup of cheese.
- Preheat a skillet or Panini press to medium-high heat.
- Spread hummus on one tortilla and top with the tomato mixture, remaining cheese, and basil leaves.
- Place the second tortilla on top and grill for a few minutes on each side until the cheese melts and the tortillas are toasted.
- For a crispier exterior, add butter or olive oil to the pan before grilling.
- Let cool for a few minutes, cut into wedges, and serve.
