Ingredients

The filling

  • 1.5 cups chopped cooked chicken
  • 1 cup frozen roasted corn kernels
  • 2 pieces green onions, sliced
  • 4 oz canned diced green chiles, drained
  • 4 oz shredded cheese
  • ¼ tsp cumin
  • ¼ tsp salt

The tortillas

  • 7 pieces 8-inch tortillas

Instructions

  1. Combine the chopped chicken, corn, green onions, green chiles, cheese, cumin, and salt in a bowl and mix well.
  2. Place ½ cup of the filling in each tortilla, spreading it over half and folding the tortilla closed.
  3. Heat a dry skillet over medium-low heat and cook the quesadillas until the tortillas are brown and crispy and the filling is melted.
  4. Cut each quesadilla into thirds and serve.
