Cowboy Quesadillas

Ingredients

The filling

  • ½ C white rice
  • C black beans
  • 1 C diced cooked chicken
  • C fresh frozen corn kernels
  • C diced tomato
  • 3 Tbs sliced green onion
  • C shredded cheese
  • ¼ C bbq sauce
  • 6 small tortillas

Dipping Sauce

  • equal parts bbq sauce and ranch dressing

Instructions

  1. Combine rice, beans, chicken, corn, tomato, green onion, and shredded cheese in a mixing bowl.
  2. Add bbq sauce and stir to combine.
  3. Place about ⅓ C of the mixture on half of each tortilla and fold over to close.
  4. Heat a skillet over medium heat and lightly spray with cooking spray or drizzle with oil.
  5. Cook the quesadillas in the skillet for 2-4 minutes until golden brown and crispy.
  6. Flip and repeat on the opposite side.
  7. Allow to cool for a few minutes before serving with BBQ-Ranch dipping sauce.
