Cowboy Quesadillas

bbq sauce

bbq sauce and ranch dressing
Instructions
- Combine rice, beans, chicken, corn, tomato, green onion, and shredded cheese in a mixing bowl.
- Add bbq sauce and stir to combine.
- Place about ⅓ C of the mixture on half of each tortilla and fold over to close.
- Heat a skillet over medium heat and lightly spray with cooking spray or drizzle with oil.
- Cook the quesadillas in the skillet for 2-4 minutes until golden brown and crispy.
- Flip and repeat on the opposite side.
- Allow to cool for a few minutes before serving with BBQ-Ranch dipping sauce.
