Easy Quesadillas

Ingredients

The filling

  • 1 cup steamed broccoli, roughly chopped
  • 1 cup rotisserie chicken, roughly chopped
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • to taste salt & pepper

The quesadillas

  • 2 8-inch flour tortillas
  • cup shredded cheese (Monterey Jack or cheddar)

Optional dipping sauce

  • ½ cup plain Greek yogurt
  • 1-2 tablespoons Sriracha

Instructions

  1. Chop the broccoli and chicken and season with cumin, garlic powder, salt, and pepper.
  2. Heat the mixture in a non-stick skillet until warmed through.
  3. Transfer the filling to a bowl.
  4. In the same skillet, heat one tortilla for 20-30 seconds.
  5. Flip the tortilla, add cheese on one half, and top with the chicken and broccoli mixture.
  6. Fold the tortilla over and press down to seal.
  7. Cook for two minutes until the bottom is browned, then flip and cook for another two minutes until both sides are browned and cheese is melted.
  8. Remove from the pan, cool slightly, and cut in half.
  9. For the dipping sauce, mix Greek yogurt and Sriracha.
