Easy Quesadillas
Ingredients
The filling

steamed broccoli, roughly chopped

rotisserie chicken, roughly chopped

cumin

garlic powder

The quesadillas

8-inch
flour tortillas

⅓
cup
shredded cheese (Monterey Jack or cheddar)
Optional dipping sauce

cup
plain Greek yogurt
-
1-2
tablespoons
Sriracha
Instructions
- Chop the broccoli and chicken and season with cumin, garlic powder, salt, and pepper.
- Heat the mixture in a non-stick skillet until warmed through.
- Transfer the filling to a bowl.
- In the same skillet, heat one tortilla for 20-30 seconds.
- Flip the tortilla, add cheese on one half, and top with the chicken and broccoli mixture.
- Fold the tortilla over and press down to seal.
- Cook for two minutes until the bottom is browned, then flip and cook for another two minutes until both sides are browned and cheese is melted.
- Remove from the pan, cool slightly, and cut in half.
- For the dipping sauce, mix Greek yogurt and Sriracha.
