Broccoli Quinoa Quesadillas

Ingredients

The filling

  • ¼ cup quinoa, cooked in vegetable broth
  • ½ cup frozen broccoli, thawed and chopped
  • 1 cup sharp cheddar cheese, shredded
  • salt to taste
  • pepper to taste

The quesadillas

  • 4 medium whole wheat tortillas
  • 2 tsp olive oil

Instructions

  1. Combine quinoa, broccoli, and cheese in a bowl and season with salt and pepper.
  2. Divide the mixture onto one half of each tortilla and fold them.
  3. Heat 1 tsp of oil in a cast iron skillet over medium heat and coat the skillet.
  4. Cook 2 quesadillas in the skillet until browned, about 3 minutes on each side.
  5. Add another tsp of oil and repeat with the remaining quesadillas.
  6. Cut the quesadillas into wedges and serve.
