Broccoli Quinoa Quesadillas

quinoa, cooked in vegetable broth

frozen broccoli, thawed and chopped

sharp cheddar cheese, shredded

The quesadillas

medium
whole wheat tortillas

olive oil
Instructions
- Combine quinoa, broccoli, and cheese in a bowl and season with salt and pepper.
- Divide the mixture onto one half of each tortilla and fold them.
- Heat 1 tsp of oil in a cast iron skillet over medium heat and coat the skillet.
- Cook 2 quesadillas in the skillet until browned, about 3 minutes on each side.
- Add another tsp of oil and repeat with the remaining quesadillas.
- Cut the quesadillas into wedges and serve.
