Ultimate BBQ Chicken Quesadillas

Instructions
- Combine chopped chicken and drained black beans in a large bowl.
- Finely dice the red onion and jalapeño, then add them to the bowl.
- Chop the cilantro leaves and add to the mixture.
- Add shredded cheddar, chili powder, smoked paprika, salt, and BBQ sauce to the bowl and stir until combined.
- Spread about ⅓ cup of the filling on one half of each tortilla and fold it over.
- Cook the folded tortillas in a dry skillet over medium-low heat until crispy and the cheese is melted.
- Cut each quesadilla in half and serve.
