Instructions
- Heat olive oil in a skillet over medium-high heat.
- Add diced onions, bell peppers, Italian seasoning, basil, salt, and pepper; sauté until vegetables are soft.
- Remove the vegetables from the skillet and set aside.
- Spread marinara or pizza sauce over each tortilla.
- Evenly distribute the sautéed vegetables, pepperoni, and mozzarella cheese on half of each tortilla.
- Fold each tortilla in half to form a quesadilla.
- Cook each quesadilla in the skillet for 2-3 minutes on each side until golden brown and crispy.
- Repeat with remaining quesadillas.
