Fajita Quesadilla

Ingredients

Vegetables

  • 1 medium onion
  • 1 medium bell pepper
  • 1 cup mushrooms

Other Ingredients

  • 2 cups shredded cheese
  • 4 large flour tortillas

Instructions

  1. Sauté the onion, bell pepper, and mushrooms in a pan until softened.
  2. Remove the vegetables from the pan and set aside.
  3. In the same pan, place one tortilla and sprinkle half of the cheese on top.
  4. Add the sautéed vegetables over the cheese, then top with the remaining cheese.
  5. Place another tortilla on top and cook until the bottom is golden brown.
  6. Flip the quesadilla and cook the other side until golden and the cheese is melted.
  7. Remove from the pan, slice, and serve warm.
