Instructions
- Sauté the onion, bell pepper, and mushrooms in a pan until softened.
- Remove the vegetables from the pan and set aside.
- In the same pan, place one tortilla and sprinkle half of the cheese on top.
- Add the sautéed vegetables over the cheese, then top with the remaining cheese.
- Place another tortilla on top and cook until the bottom is golden brown.
- Flip the quesadilla and cook the other side until golden and the cheese is melted.
- Remove from the pan, slice, and serve warm.
