Smoked Gouda Mushroom Quesadillas

Ingredients

The filling

  • 1 each yellow onion
  • 2 each bell peppers (red and yellow)
  • 16 ounces fresh sliced white mushrooms

The cooking fats

  • 1 tablespoon olive oil
  • 4 tablespoons butter (divided)

The cheese and tortillas

  • 1 ¼ cups shredded smoked gouda cheese
  • 10 each flour tortillas

Toppings

  • to taste sour cream
  • to taste cilantro
  • to taste other toppings

Instructions

  1. Slice the onion and bell peppers into thin strips.
  2. Heat olive oil in a skillet and sauté the onions until soft, then add the peppers and cook until soft.
  3. Transfer the sautéed vegetables to a bowl.
  4. In the same skillet, melt 1 ½ tablespoons of butter and sauté the mushrooms until golden brown, then mix with the peppers and onions.
  5. For each quesadilla, melt ½ tablespoon of butter in the skillet, layer a tortilla, cheese, the pepper-mushroom mixture, more cheese, and another tortilla.
  6. Press the quesadilla with a spatula, flip it carefully, and cook until golden brown and cheese is melted.
  7. Remove from the skillet, cut into wedges, and serve with toppings.
