Smoked Gouda Mushroom Quesadillas

Instructions
- Slice the onion and bell peppers into thin strips.
- Heat olive oil in a skillet and sauté the onions until soft, then add the peppers and cook until soft.
- Transfer the sautéed vegetables to a bowl.
- In the same skillet, melt 1 ½ tablespoons of butter and sauté the mushrooms until golden brown, then mix with the peppers and onions.
- For each quesadilla, melt ½ tablespoon of butter in the skillet, layer a tortilla, cheese, the pepper-mushroom mixture, more cheese, and another tortilla.
- Press the quesadilla with a spatula, flip it carefully, and cook until golden brown and cheese is melted.
- Remove from the skillet, cut into wedges, and serve with toppings.
