Skinny Buffalo Burger Quesadilla

Ingredients

  • 1 lb 100% lean grass-fed ground buffalo
  • 1 cup pico de gallo
  • 1 cup shredded reduced fat cheddar jack cheese
  • 8 small whole wheat flour tortillas
  • to taste salt
  • to taste fresh pepper
  • as needed spray oil

Instructions

  1. Form 4 flat patties from the buffalo meat and season with salt and pepper.
  2. Heat a pan over medium-high heat, spray with oil, and cook the patties for about 2 minutes on each side or until cooked to your liking.
  3. Remove the patties and clean the pan. Heat it on medium heat and spray with oil again.
  4. Place 4 tortillas in the pan, adding 2 tablespoons of cheese and 2 tablespoons of pico de gallo on each.
  5. Top each with a buffalo burger, then add the remaining pico de gallo and cheese.
  6. Cover with another tortilla, flip, and cook until the cheese melts.
