Skinny Buffalo Burger Quesadilla

Instructions
- Form 4 flat patties from the buffalo meat and season with salt and pepper.
- Heat a pan over medium-high heat, spray with oil, and cook the patties for about 2 minutes on each side or until cooked to your liking.
- Remove the patties and clean the pan. Heat it on medium heat and spray with oil again.
- Place 4 tortillas in the pan, adding 2 tablespoons of cheese and 2 tablespoons of pico de gallo on each.
- Top each with a buffalo burger, then add the remaining pico de gallo and cheese.
- Cover with another tortilla, flip, and cook until the cheese melts.
