Philly Cheesesteak Sliders

minced, remove seeds for less heat

boneless ribeye, shaved as thinly as you can

The cheese sauce

flour

milk (2% recommended)

extra sharp cheddar, grated

Instructions
- Melt butter in a large sauté pan over medium heat.
- Add green pepper and cook for 7-8 minutes until starting to soften, seasoning with salt and pepper.
- Once softened, add onion and cook for 5-7 minutes until translucent.
- Reduce heat to low-medium and add jalapeño and garlic, mixing well.
- Cook for 2-3 minutes, then push the veggie mixture to one side of the pan.
- On the empty side, add shaved ribeye, seasoning with salt and pepper, and cook for 1-2 minutes until mostly browned.
- Combine the meat with the veggies and set aside.
- In a separate saucepan, melt butter over medium-low heat and whisk in flour until fully incorporated.
- Slowly add milk, whisking to combine, and bring to a quick boil before reducing to a simmer until thickened.
- Stir in cheese until blended and season with salt and pepper.
- Slice slider buns in half and top with the meat and veggie mixture, then pour cheese sauce on top.
- Serve hot and enjoy!
