Mushroom Medley Frittata

Ingredients

The frittata

  • 8 large eggs
  • 1 tbsp coconut oil
  • 2 cups mixed fresh mushrooms, sliced
  • ½ cup red onion, sliced
  • 2 cups spinach
  • 1–2 tsp fresh herbs of choice
  • ¼ cup goat cheese or cheese of choice

Seasoning

  • to taste salt and pepper

Instructions

  1. Preheat the broiler to high (550 degrees).
  2. Whisk the eggs in a medium bowl, add salt and pepper, and set aside.
  3. In an oven-safe skillet, heat coconut oil over medium heat.
  4. Add mushrooms and red onion to the skillet and sauté for 3-4 minutes.
  5. Add spinach and herbs, sautéing for another 30-60 seconds until the spinach wilts.
  6. Top the vegetables with goat cheese and pour the eggs over them.
  7. Cook on medium heat for 4-5 minutes until the edges begin to set.
  8. Broil for another 3-4 minutes until the center is just about set, watching carefully.
  9. Remove from the oven, let set for 5 minutes, and enjoy.
