Mushroom Medley Frittata

Instructions
- Preheat the broiler to high (550 degrees).
- Whisk the eggs in a medium bowl, add salt and pepper, and set aside.
- In an oven-safe skillet, heat coconut oil over medium heat.
- Add mushrooms and red onion to the skillet and sauté for 3-4 minutes.
- Add spinach and herbs, sautéing for another 30-60 seconds until the spinach wilts.
- Top the vegetables with goat cheese and pour the eggs over them.
- Cook on medium heat for 4-5 minutes until the edges begin to set.
- Broil for another 3-4 minutes until the center is just about set, watching carefully.
- Remove from the oven, let set for 5 minutes, and enjoy.
