Ingredients

The soup

  • 4 cups shredded chicken

  • 64 oz organic chicken broth
  • ¾ tsp cumin
  • tsp coarse kosher salt
  • ½ tsp pepper

Toppings

  • 2 whole avocados
  • ½ cup finely chopped cilantro
  • ½ cup chopped green onion
  • to taste lime wedges

Instructions

  1. Add the shredded chicken, green onions, cilantro, garlic, fire-roasted tomatoes, chicken broth, cumin, salt, and pepper to the Instant Pot.
  2. Stir the ingredients to ensure they are well-distributed.
  3. Lock the lid and press the 'Soup' button, setting it to cook for 20 minutes under high pressure.
  4. After cooking, manually release the pressure.
  5. Once the pressure is released, add the diced avocados and stir.
  6. Top each bowl with desired toppings and enjoy!
