Ingredients

The parsnips

  • 2 pounds parsnips

The seasoning

  • 2-3 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon cinnamon (optional)
  • ½ teaspoon coriander (optional)
  • ¼ teaspoon smoked paprika (optional)

The garnish

  • 1 tablespoon fresh parsley, minced
  • to taste none fresh orange juice (or champagne vinegar or white balsamic vinegar)

Instructions

  1. Preheat the oven to 425°F.
  2. Peel the parsnips and cut them in half widthwise, then cut each piece in half lengthwise, chopping into ½-inch wide strips.
  3. Toss the parsnip strips with olive oil, salt, pepper, and optional spices.
  4. Line a baking sheet with parchment paper and spread the parsnip strips in a single layer.
  5. Bake for 20-25 minutes or until fork tender.
  6. Garnish with a squeeze of orange juice and sprinkle with fresh parsley.
