Instructions
- Preheat the oven to 425°F.
- Peel the parsnips and cut them in half widthwise, then cut each piece in half lengthwise, chopping into ½-inch wide strips.
- Toss the parsnip strips with olive oil, salt, pepper, and optional spices.
- Line a baking sheet with parchment paper and spread the parsnip strips in a single layer.
- Bake for 20-25 minutes or until fork tender.
- Garnish with a squeeze of orange juice and sprinkle with fresh parsley.
