Ingredients

The fries

  • 2 pounds parsnips, peeled and cut into 3 inch x ½-inch strips
  • 2 tablespoons extra virgin olive oil
  • ¾ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon garlic powder

The toppings

  • ½ cup freshly grated Parmesan cheese
  • ¼ cup chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet.
  2. Toss the cut parsnips with olive oil, salt, pepper, and garlic powder in a bowl.
  3. Spread the seasoned parsnips in a single layer on the baking sheet.
  4. Roast for 15 minutes, then flip the fries and roast for an additional 10-15 minutes until golden brown.
  5. Sprinkle half of the Parmesan cheese on top and return to the oven for 1 minute to melt.
  6. Let rest for 2 minutes, then toss with the remaining Parmesan cheese and fresh parsley.
