Instructions
- Preheat the oven to 425°F and prepare a baking sheet.
- Toss the cut parsnips with olive oil, salt, pepper, and garlic powder in a bowl.
- Spread the seasoned parsnips in a single layer on the baking sheet.
- Roast for 15 minutes, then flip the fries and roast for an additional 10-15 minutes until golden brown.
- Sprinkle half of the Parmesan cheese on top and return to the oven for 1 minute to melt.
- Let rest for 2 minutes, then toss with the remaining Parmesan cheese and fresh parsley.
