Ingredients

The fries

  • 1 tsp olive oil
  • 1 clove garlic, crushed
  • 1 medium potato, russet or yukon gold (6 oz), washed and dried
  • to taste kosher salt
  • to taste black pepper
  • 2 tsp fresh grated Parmesan cheese
  • to taste fresh parsley, minced

Cooking spray

  • canola cooking spray

Instructions

  1. Combine olive oil and crushed garlic in a small bowl.
  2. Preheat the oven to 425°F and lightly coat a baking sheet with cooking spray.
  3. Cut the potato lengthwise into ¼-inch thick slices and then into strips.
  4. Toss the potato strips with the oil and garlic mixture, ensuring they are evenly coated.
  5. Season with kosher salt and black pepper, and spread them in a single layer on the baking sheet.
  6. Bake uncovered for about 10 minutes on each side until tender and golden brown.
  7. Remove from the oven and top with Parmesan cheese and minced parsley before serving hot.
