Instructions
- Preheat the oven to 425°F.
- Cut the sweet potatoes into ¼-inch thick matchsticks and place them in a large bowl.
- Toss the sweet potatoes with vegetable oil, sea salt, garlic powder, black pepper, and cayenne until evenly coated.
- Spread the potatoes in a single layer on a parchment-covered baking sheet.
- Bake for 15-20 minutes, flipping once or twice, until the edges begin to brown and the fries are crispy.
- Remove from the oven and immediately sprinkle with Parmesan cheese and parsley, tossing briefly to combine.
