Ingredients

The fries

  • 2 pounds sweet potatoes
  • 2 Tablespoons vegetable oil
  • 2 teaspoons sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon freshly-cracked black pepper
  • ¼ teaspoon ground cayenne

The toppings

  • ½ cup freshly-grated Parmesan cheese
  • ¼ cup finely-chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F.
  2. Cut the sweet potatoes into ¼-inch thick matchsticks and place them in a large bowl.
  3. Toss the sweet potatoes with vegetable oil, sea salt, garlic powder, black pepper, and cayenne until evenly coated.
  4. Spread the potatoes in a single layer on a parchment-covered baking sheet.
  5. Bake for 15-20 minutes, flipping once or twice, until the edges begin to brown and the fries are crispy.
  6. Remove from the oven and immediately sprinkle with Parmesan cheese and parsley, tossing briefly to combine.
  7. Serve warm with your favorite dipping sauce.
