Crispy Baked Sweet Potato Fries

Instructions
- Preheat the oven to 425ºF and spray a baking sheet with nonstick cooking spray.
- Slice the sweet potato into 1/4-inch fries, optionally peeling them first.
- Place the fries on the baking sheet and combine corn starch, garlic powder, salt, and pepper in a bowl.
- Sprinkle the mixture over the fries and toss to coat evenly.
- Drizzle olive oil over the fries and toss again.
- Spread the fries out on the pan without overlapping.
- Bake for 10 minutes, then flip the fries and bake for another 10 minutes.
- Flip again and roast for an additional 2-4 minutes until crispy.
- Season with coarse sea salt and serve immediately.
