Baked Crunchy Sweet Potato Fries

Ingredients

  • 2 large sweet potatoes
  • 1 ½ tbsp corn starch
  • 1 tbsp canola oil
  • 1 tbsp olive oil
  • 2 tsp paprika
  • 2 tsp garlic powder
  • to taste salt
  • to taste pepper

Instructions

  1. Soak the sliced sweet potatoes in cold water for an hour.
  2. Preheat the oven to 450°F and warm a baking pan in the oven for 6-8 minutes.
  3. Drain and dry the sweet potatoes with paper towels.
  4. Place the sweet potatoes in a Ziploc bag with corn starch, seal, and shake to coat evenly.
  5. Remove the heated pan, line it with parchment paper, and spray with cooking oil.
  6. Spread the fries on the pan without them touching and coat with oil and seasonings.
  7. Bake for 15-20 minutes, then check for tenderness and flip if needed.
  8. Bake for an additional 5-10 minutes until tender-crisp.
  9. Turn off the oven, leave the door open, and let the fries sit for 5 more minutes before serving.
