Baked Crunchy Sweet Potato Fries

Instructions
- Soak the sliced sweet potatoes in cold water for an hour.
- Preheat the oven to 450°F and warm a baking pan in the oven for 6-8 minutes.
- Drain and dry the sweet potatoes with paper towels.
- Place the sweet potatoes in a Ziploc bag with corn starch, seal, and shake to coat evenly.
- Remove the heated pan, line it with parchment paper, and spray with cooking oil.
- Spread the fries on the pan without them touching and coat with oil and seasonings.
- Bake for 15-20 minutes, then check for tenderness and flip if needed.
- Bake for an additional 5-10 minutes until tender-crisp.
- Turn off the oven, leave the door open, and let the fries sit for 5 more minutes before serving.
