Instructions
- Preheat the oven to 425°F and prepare two baking sheets with parchment paper.
- Peel and cut sweet potatoes into fry-shaped pieces about ¼" wide and thick.
- Sprinkle fries with cornstarch and salt, then toss to coat evenly.
- Drizzle olive oil over the fries and toss again until coated.
- Arrange fries in a single layer on the baking sheets without overcrowding.
- Bake for 20 minutes, then flip the fries and swap the pans' positions.
- Continue baking for an additional 10 to 18 minutes until crispy.
- Season with optional spices if desired and serve warm.
