Ingredients

The fries

  • 2 pounds sweet potatoes

The coating

  • 1 tablespoon cornstarch
  • ½ teaspoon fine sea salt
  • 2 tablespoons extra-virgin olive oil

Optional spices

  • to taste freshly ground black pepper
  • to taste cayenne pepper
  • to taste garlic powder

Instructions

  1. Preheat the oven to 425°F and prepare two baking sheets with parchment paper.
  2. Peel and cut sweet potatoes into fry-shaped pieces about ¼" wide and thick.
  3. Sprinkle fries with cornstarch and salt, then toss to coat evenly.
  4. Drizzle olive oil over the fries and toss again until coated.
  5. Arrange fries in a single layer on the baking sheets without overcrowding.
  6. Bake for 20 minutes, then flip the fries and swap the pans' positions.
  7. Continue baking for an additional 10 to 18 minutes until crispy.
  8. Season with optional spices if desired and serve warm.
