Instructions
- Preheat the oven to 425°F and line two baking sheets with parchment paper.
- Slice the sweet potatoes into ¼- to ½-inch-thick planks, then cut them into matchsticks.
- In a small bowl, mix cornstarch and water until smooth, then pour over the sweet potatoes.
- Add garlic powder, paprika, and salt to the sweet potatoes, and toss to coat evenly.
- Arrange the fries on the baking sheets, leaving space between them, and drizzle with olive oil.
- Bake for 15 minutes, then flip the fries and drizzle with more oil if needed.
- Return to the oven and bake for another 7 to 12 minutes until browned and crisp.
- Let cool slightly, then season with more spices and serve.
