Ingredients

  • 1 pound sweet potatoes
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon sea salt
  • to taste extra-virgin olive oil

Instructions

  1. Preheat the oven to 425°F and line two baking sheets with parchment paper.
  2. Slice the sweet potatoes into ¼- to ½-inch-thick planks, then cut them into matchsticks.
  3. In a small bowl, mix cornstarch and water until smooth, then pour over the sweet potatoes.
  4. Add garlic powder, paprika, and salt to the sweet potatoes, and toss to coat evenly.
  5. Arrange the fries on the baking sheets, leaving space between them, and drizzle with olive oil.
  6. Bake for 15 minutes, then flip the fries and drizzle with more oil if needed.
  7. Return to the oven and bake for another 7 to 12 minutes until browned and crisp.
  8. Let cool slightly, then season with more spices and serve.
