Instructions
- Wash and peel the sweet potatoes, then cut them into sticks.
- For fried fries, rinse the sticks in cold water twice and boil for 4 minutes, then place in an ice bath.
- Prepare a batter with cornstarch, water, salt, and pepper, and dip the fries, letting them rest on paper towels.
- Heat vegetable oil to 350°F and deep fry the fries in batches until golden, about 5-7 minutes.
- Drain on paper towels and season with additional salt and pepper.
- For baked fries, coat the sticks in salt, pepper, and cornstarch, then toss with olive oil.
- Place on a cooking spray-coated sheet pan and bake at 400°F for 15 minutes, flipping halfway through until golden.
