Ingredients

Fried Sweet Potato Fries

  • 4 medium sweet potatoes
  • cup cornstarch
  • 6 cups vegetable oil
  • 2 teaspoons salt
  • ¾ teaspoon pepper
  • to taste additional salt
  • to taste additional pepper
  • optional chopped parsley

Baked Sweet Potato Fries

  • 4 medium sweet potatoes
  • 4 tablespoons olive oil
  • 3 tablespoons cornstarch
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • to taste additional salt
  • to taste additional pepper
  • optional chopped parsley
  • 1 spray cooking spray

Instructions

  1. Wash and peel the sweet potatoes, then cut them into sticks.
  2. For fried fries, rinse the sticks in cold water twice and boil for 4 minutes, then place in an ice bath.
  3. Prepare a batter with cornstarch, water, salt, and pepper, and dip the fries, letting them rest on paper towels.
  4. Heat vegetable oil to 350°F and deep fry the fries in batches until golden, about 5-7 minutes.
  5. Drain on paper towels and season with additional salt and pepper.
  6. For baked fries, coat the sticks in salt, pepper, and cornstarch, then toss with olive oil.
  7. Place on a cooking spray-coated sheet pan and bake at 400°F for 15 minutes, flipping halfway through until golden.
