Ingredients

The fries

  • 2 large sweet potatoes

The coating

  • 2-3 tablespoons coconut oil
  • 1 tablespoon cornstarch
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • optional cinnamon

Instructions

  1. Preheat the oven to 425°F (218°C) and place the baking sheet in the oven.
  2. Cut the sweet potatoes into even fries, about ¼ inch thick by 3 inches long.
  3. Toss the fries with cornstarch until evenly coated, then add coconut oil and toss again.
  4. Mix salt, pepper, and garlic powder in a small dish and add to the fries, tossing until well coated.
  5. Remove the hot baking sheet from the oven and arrange the fries in a single layer.
  6. Bake for 20-25 minutes, flipping halfway through for even browning.
  7. If necessary, turn on the broiler for the last 1-2 minutes to crisp them up, watching closely.
  8. Let the fries rest for 3-5 minutes to crisp up further and sprinkle with cinnamon if desired before serving.
