Parmesan Sweet Potato Fries

Instructions
- Peel and rinse the sweet potatoes, then cut them into lengthwise strips.
- Soak the strips in water for 30 minutes.
- Drain the water and pat the strips dry with paper towels.
- In a large bowl, mix the sweet potatoes with olive oil and salt, then set aside.
- Preheat the air fryer to 330°F (165°C).
- Place the sweet potatoes in the cooking basket and cook for 5 minutes until crisp.
- Remove the fries from the basket and let them cool on a wire rack.
- Increase the air fryer temperature to 390°F (198°C) and return the sweet potatoes to the basket.
- Cook for an additional 10-15 minutes.
- Transfer the fries to a serving plate and sprinkle with parmesan cheese, tossing gently to combine.
- Garnish with parsley and serve immediately.
