Roasted Garlic Saffron Aioli

Instructions
- Preheat the oven to 425°F.
- In a large bowl, combine cut potatoes with olive oil, roasted garlic, oregano, basil, cayenne, salt, and pepper, and toss to coat.
- Spread the fries on two baking sheets in a single layer and bake for 15-20 minutes.
- Lower the oven temperature to 400°F, flip the fries, and bake for an additional 15-20 minutes.
- Remove fries from the oven and toss with fresh basil, parsley, and feta cheese.
- For the aioli, blend mayo, dijon mustard, roasted garlic, saffron, lemon juice, and a pinch of salt and pepper until smooth.
- Serve fries with the aioli for dipping.
