Skinny Greek Feta Fries

Ingredients

The fries

  • 4 pieces russet potatoes
  • ¼ cup olive oil
  • 4-6 cloves roasted garlic
  • 1 teaspoon fresh oregano
  • 1 teaspoon fresh basil
  • a pinch cayenne pepper
  • to taste salt and pepper
  • 6 ounces feta cheese
  • fresh parsley for garnish

Roasted Garlic Saffron Aioli

  • ½ cup olive oil based mayo
  • 1 tablespoon dijon mustard
  • 4-6 cloves roasted garlic
  • a heavy pinch saffron
  • 1-2 tablespoons lemon juice
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 425°F.
  2. In a large bowl, combine cut potatoes with olive oil, roasted garlic, oregano, basil, cayenne, salt, and pepper, and toss to coat.
  3. Spread the fries on two baking sheets in a single layer and bake for 15-20 minutes.
  4. Lower the oven temperature to 400°F, flip the fries, and bake for an additional 15-20 minutes.
  5. Remove fries from the oven and toss with fresh basil, parsley, and feta cheese.
  6. For the aioli, blend mayo, dijon mustard, roasted garlic, saffron, lemon juice, and a pinch of salt and pepper until smooth.
  7. Serve fries with the aioli for dipping.
