Crispy Baked Fries with Roasted Garlic Aioli

The aioli

mayo

lemon juice

Instructions
- Preheat the oven to 400°F.
- Soak the sliced potatoes in a large bowl of water for 30 minutes.
- In a small bowl, whisk together mayo, lemon juice, prepared horseradish, roasted garlic, salt, and pepper, then set aside.
- Drain the potatoes and pat them dry with a paper towel.
- In a large bowl, combine the dry potatoes with olive oil and half of the spice blend.
- Spread the potatoes in a single layer on a parchment-lined baking sheet.
- Bake for 30 minutes, turning halfway through, until slightly browned and crispy.
- Remove from the oven and season with the remaining spice blend, tossing to coat.
- Serve the fries with the roasted garlic aioli.
