Crispy Baked Fries with Roasted Garlic Aioli

Ingredients

The fries

  • 5 pieces yukon gold potatoes, cut into ½” strips
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • ½ teaspoon dry basil
  • ½ teaspoon smoked paprika

The aioli

  • ½ cup mayo
  • 1 tablespoon lemon juice
  • 1 tablespoon prepared horseradish
  • 1 whole bulb roasted garlic
  • to taste salt & pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Soak the sliced potatoes in a large bowl of water for 30 minutes.
  3. In a small bowl, whisk together mayo, lemon juice, prepared horseradish, roasted garlic, salt, and pepper, then set aside.
  4. Drain the potatoes and pat them dry with a paper towel.
  5. In a large bowl, combine the dry potatoes with olive oil and half of the spice blend.
  6. Spread the potatoes in a single layer on a parchment-lined baking sheet.
  7. Bake for 30 minutes, turning halfway through, until slightly browned and crispy.
  8. Remove from the oven and season with the remaining spice blend, tossing to coat.
  9. Serve the fries with the roasted garlic aioli.
