Crispy Baked Rosemary Garlic Fries

Ingredients

  • 3 pieces russet potatoes
  • 2-3 Tbsp avocado or olive oil (to rim pan)
  • 1 Tbsp olive oil (for coating fries)
  • tsp sea salt
  • tsp pepper
  • 1 large handful rosemary
  • 2-3 cloves fresh garlic (minced)

Instructions

  1. Preheat the oven to 475°F (246°C).
  2. Soak the potatoes in hot water for 15 minutes, then drain and dry them thoroughly.
  3. Place the potatoes back in the dry bowl, drizzle with olive oil, and add salt and pepper; toss to coat.
  4. Coat a rimmed baking sheet with oil and drain off any excess.
  5. Transfer the fries to the baking sheet and arrange them in a single layer.
  6. Cover with foil and bake for 5 minutes.
  7. Remove the foil and bake for an additional 15 minutes.
  8. Turn the fries over with a spatula, ensuring they remain in a single layer, and bake for another 5 minutes.
  9. Flip the fries once more and return to the oven for 5-10 minutes, or until golden brown and crispy.
  10. Transfer the fries to a large bowl, season with additional salt, minced garlic, and rosemary while still hot, then toss and serve warm.
