Instructions
- Preheat the oven to 475°F (246°C).
- Soak the potatoes in hot water for 15 minutes, then drain and dry them thoroughly.
- Place the potatoes back in the dry bowl, drizzle with olive oil, and add salt and pepper; toss to coat.
- Coat a rimmed baking sheet with oil and drain off any excess.
- Transfer the fries to the baking sheet and arrange them in a single layer.
- Cover with foil and bake for 5 minutes.
- Remove the foil and bake for an additional 15 minutes.
- Turn the fries over with a spatula, ensuring they remain in a single layer, and bake for another 5 minutes.
- Flip the fries once more and return to the oven for 5-10 minutes, or until golden brown and crispy.
- Transfer the fries to a large bowl, season with additional salt, minced garlic, and rosemary while still hot, then toss and serve warm.
