Ingredients

The fries

  • 4 medium Russet potatoes
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon corn starch
  • 1½-2 tablespoons chopped fresh rosemary

The topping

  • to taste canned Parmesan cheese

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with aluminum foil and non-stick spray.
  2. Cut the potatoes into 8 wedges each and set aside.
  3. In a large bowl, mix the olive oil, salt, garlic powder, black pepper, corn starch, and rosemary.
  4. Add the potato wedges to the bowl and toss to coat them evenly with the mixture.
  5. Spread the coated wedges on the prepared baking sheet and bake for about 40 minutes until golden brown.
  6. Remove from the oven, sprinkle with Parmesan cheese, and toss to combine.
  7. If desired, add more rosemary and salt before serving.
