Ingredients

The potatoes

  • 4 large Russet potatoes

The seasoning

  • ¼ cup olive oil
  • ½ cup finely shredded parmesan
  • 2 tsp minced fresh rosemary
  • tsp garlic powder
  • 1 Tbsp minced fresh parsley
  • to taste salt
  • to taste black pepper

The creamy basil fry sauce (optional)

  • ¼ cup light mayonnaise
  • ¼ cup plain Greek yogurt
  • ½ tsp dried basil
  • Tbsp milk
  • tsp garlic powder
  • 2 pinches salt

Instructions

  1. Preheat the oven to 400°F and grease a baking sheet.
  2. Scrub and rinse the potatoes, then cut them into wedges.
  3. Drizzle the potato wedges with olive oil and sprinkle with parmesan, rosemary, garlic powder, salt, and pepper. Toss to coat.
  4. Spread the potatoes in a single layer on the baking sheet with the cut side down.
  5. Roast for 30-35 minutes, turning them halfway through. Broil for the last 1-2 minutes to crisp them up.
  6. Sprinkle with additional parmesan and parsley before serving.
  7. For the sauce, whisk together all sauce ingredients in a bowl and serve with the potato wedges.
