Instructions
- Preheat the oven to 400°F and grease a baking sheet.
- Scrub and rinse the potatoes, then cut them into wedges.
- Drizzle the potato wedges with olive oil and sprinkle with parmesan, rosemary, garlic powder, salt, and pepper. Toss to coat.
- Spread the potatoes in a single layer on the baking sheet with the cut side down.
- Roast for 30-35 minutes, turning them halfway through. Broil for the last 1-2 minutes to crisp them up.
- Sprinkle with additional parmesan and parsley before serving.
- For the sauce, whisk together all sauce ingredients in a bowl and serve with the potato wedges.
