Instructions
- Preheat the oven to 400°F.
- Place the potato wedges in a large mixing bowl.
- In another bowl, combine olive oil, Parmesan cheese, Dijon mustard, oregano, garlic powder, onion powder, salt, pepper, smoked paprika, and chili flakes; mix until a paste forms.
- Dump the paste over the potato wedges and toss to coat evenly.
- Spread the potato wedges skin side down in a dark roasting pan, leaving space between each wedge.
- Bake for 30 to 35 minutes until fork tender and golden brown.
- Sprinkle with chopped parsley and additional Parmesan cheese if desired, then serve immediately.
