Ingredients

The Potatoes

  • 4 large red skinned potatoes

The Coating

  • ¼ cup extra-virgin olive oil
  • ¼ cup finely grated Parmesan cheese
  • 1 tbsp Dijon mustard
  • 1 tbsp dried oregano
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ½ tsp smoked paprika
  • ½ tsp chili pepper flakes
  • to taste chopped fresh parsley
  • to taste grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F.
  2. Place the potato wedges in a large mixing bowl.
  3. In another bowl, combine olive oil, Parmesan cheese, Dijon mustard, oregano, garlic powder, onion powder, salt, pepper, smoked paprika, and chili flakes; mix until a paste forms.
  4. Dump the paste over the potato wedges and toss to coat evenly.
  5. Spread the potato wedges skin side down in a dark roasting pan, leaving space between each wedge.
  6. Bake for 30 to 35 minutes until fork tender and golden brown.
  7. Sprinkle with chopped parsley and additional Parmesan cheese if desired, then serve immediately.
