Instructions
- Preheat the oven to 425°F and line two baking sheets with parchment paper.
- In a large bowl, toss the potatoes with olive oil, garlic powder, salt, onion powder, smoked paprika, and black pepper.
- Spread the potatoes evenly on the baking sheets.
- Roast for 40 to 45 minutes, flipping the potatoes and rotating the pans halfway through.
- The wedges are done when they are tender and golden brown around the edges.
- Sprinkle with parsley and Parmesan cheese if desired, season with salt to taste, and serve.
