Ingredients

The potatoes

  • 4 medium russet potatoes

The seasonings

  • 2 tablespoons extra-virgin olive oil
  • teaspoons garlic powder
  • 1 teaspoon sea salt
  • ¾ teaspoon onion powder
  • ¾ teaspoon smoked paprika
  • to taste freshly ground black pepper
  • optional chopped fresh parsley
  • optional grated Parmesan cheese

Instructions

  1. Preheat the oven to 425°F and line two baking sheets with parchment paper.
  2. In a large bowl, toss the potatoes with olive oil, garlic powder, salt, onion powder, smoked paprika, and black pepper.
  3. Spread the potatoes evenly on the baking sheets.
  4. Roast for 40 to 45 minutes, flipping the potatoes and rotating the pans halfway through.
  5. The wedges are done when they are tender and golden brown around the edges.
  6. Sprinkle with parsley and Parmesan cheese if desired, season with salt to taste, and serve.
