Rosemary Sweet Potato Fries

Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Soak the cut sweet potatoes in cold water for at least 20 minutes.
- Drain and rinse the potatoes, then pat them dry with a towel.
- In a bowl, toss the fries with melted coconut oil and chopped rosemary.
- Arrange the fries in a single layer on the baking sheet and bake for 15 minutes.
- Flip the fries and return them to the oven for another 10 minutes or until golden.
- Sprinkle with sea salt and pepper while hot, and serve immediately.
