Hot and Sour Soup with Tofu

Instructions
- Prepare the vegetables by slicing the cabbage, mushrooms, and green onions, and julienning or ribboning the carrots.
- In a large pot, heat canola oil and sauté the ginger and white parts of the green onions until soft.
- Add vegetable broth, soy sauce, rice vinegar, and chili garlic sauce to the pot and heat until hot.
- Cube the tofu and add it to the hot broth, allowing it to heat through.
- Decide whether to add the sliced vegetables to the pot or serve them in bowls and ladle the broth over them.
- Garnish with the green parts of the green onions and additional chili garlic sauce if desired.
