Hot and Sour Soup with Tofu

Ingredients

  • 1 Tbsp canola oil
  • 1 Tbsp grated fresh ginger
  • 4 pieces green onions
  • ¼ head red cabbage
  • 3 pieces carrots
  • 8 oz button mushrooms
  • 6 cups vegetable broth
  • ½ Tbsp soy sauce
  • 1½-2 Tbsp rice vinegar
  • 1 Tbsp chili garlic sauce or sambal olek
  • 14 oz block extra firm tofu

Instructions

  1. Prepare the vegetables by slicing the cabbage, mushrooms, and green onions, and julienning or ribboning the carrots.
  2. In a large pot, heat canola oil and sauté the ginger and white parts of the green onions until soft.
  3. Add vegetable broth, soy sauce, rice vinegar, and chili garlic sauce to the pot and heat until hot.
  4. Cube the tofu and add it to the hot broth, allowing it to heat through.
  5. Decide whether to add the sliced vegetables to the pot or serve them in bowls and ladle the broth over them.
  6. Garnish with the green parts of the green onions and additional chili garlic sauce if desired.
