Mint Chip Cheesecake Mousse

Instructions
- Mix crushed Oreos and melted butter, then press into the bottom of 8 dessert cups.
- Combine cold water and gelatin in a bowl and let it sit for 5-10 minutes.
- Whip heavy cream until soft peaks form, then add ¼ cup powdered sugar and whip until stiff peaks form.
- In another bowl, beat cream cheese until smooth, then mix in remaining powdered sugar, mint extract, peppermint extract, and food coloring if using.
- Heat the gelatin mixture in the microwave for 30 seconds, whisk until dissolved, and let cool for 3 minutes.
- Combine the gelatin with the cream cheese mixture using a hand mixer.
- Fold in the whipped cream and chopped chocolate into the cream cheese mixture until combined.
- Pipe or spoon the mousse over the Oreo crust in the cups and chill for 3 hours.
- Before serving, add whipped cream, mint leaves, and chopped chocolate as garnish.
