Mint Chip Cheesecake Mousse

Ingredients

The crust

  • 13 pieces regular Oreos, finely crushed
  • 2 Tbsp butter, melted

The mousse

  • 2 Tbsp cold water
  • 1 ½ tsp gelatin powder
  • 1 ½ cups heavy cream
  • 2 pkg. cream cheese, softened
  • 1 tsp mint extract
  • ½ tsp peppermint extract
  • 1 ½ cups powdered sugar, divided
  • 1 bar good quality semi-sweet chocolate, finely chopped
  • Green and yellow drops food coloring (optional)

For garnish

  • to taste sweetened whipped cream
  • to taste mint leaves
  • to taste finely chopped chocolate

Instructions

  1. Mix crushed Oreos and melted butter, then press into the bottom of 8 dessert cups.
  2. Combine cold water and gelatin in a bowl and let it sit for 5-10 minutes.
  3. Whip heavy cream until soft peaks form, then add ¼ cup powdered sugar and whip until stiff peaks form.
  4. In another bowl, beat cream cheese until smooth, then mix in remaining powdered sugar, mint extract, peppermint extract, and food coloring if using.
  5. Heat the gelatin mixture in the microwave for 30 seconds, whisk until dissolved, and let cool for 3 minutes.
  6. Combine the gelatin with the cream cheese mixture using a hand mixer.
  7. Fold in the whipped cream and chopped chocolate into the cream cheese mixture until combined.
  8. Pipe or spoon the mousse over the Oreo crust in the cups and chill for 3 hours.
  9. Before serving, add whipped cream, mint leaves, and chopped chocolate as garnish.
