Oven-Baked Buffalo Chicken Egg Rolls

Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the shredded chicken, chopped celery, chopped green onion, and buffalo sauce, stirring until well mixed.
- Lay the egg roll wrappers in a diamond shape on a flat surface and place ¼ cup of the buffalo chicken filling in the center of each wrapper.
- Fold the bottom corner of the wrapper over the filling, then fold in the left and right corners, and roll tightly towards the top corner. Moisten edges with water if needed to seal.
- Place the rolled egg rolls on the prepared baking sheet and repeat until all wrappers are filled.
- Bake in the preheated oven for 15 to 20 minutes, or until golden brown and crispy.
- Serve hot with optional dipping sauces and vegetable sticks.
