Ingredients

The chicken

  • pounds skinless, boneless chicken breasts or tenders

The coating

  • 5 cups corn flakes cereal
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 cup all-purpose flour
  • 2 large eggs
  • ¼ cup milk

The sauce

  • 1 cup buffalo wing sauce

Optional serving

  • celery sticks optional for serving
  • blue cheese sauce optional for serving

Blue cheese dipping sauce

  • ½ cup mayonnaise
  • ½ cup sour cream
  • 2 teaspoons milk
  • 1 teaspoon Worcestershire sauce
  • cup blue cheese crumbles

Instructions

  1. If using chicken breasts, pound down and cut into strips.
  2. Preheat the oven to 400°F (204°C) and prepare a baking sheet.
  3. Process the corn flakes with seasonings until broken down but not completely crushed.
  4. Set up three bowls: one with flour, one with the egg and milk mixture, and one with the corn flake mixture.
  5. Coat each chicken strip in flour, dip in the egg mixture, then roll in the corn flakes.
  6. Place the coated chicken strips on the prepared baking sheet.
  7. Bake for 10 minutes, then flip and bake for another 10 minutes until cooked through.
  8. Allow to cool for 5 minutes, then toss the chicken fingers in buffalo sauce.
  9. Serve warm with blue cheese dipping sauce.
