Ingredients

The chicken mixture

  • 3 cups shredded cooked chicken
  • cup favorite hot sauce
  • oz. fat-free cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ¼ cup green onions, chopped

The coating

  • ½ cup all-purpose flour
  • 2 eggs lightly beaten
  • 3 cups Corn Flakes cereal, crushed

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine shredded chicken, hot sauce, and cream cheese; mix well.
  3. Stir in cheddar cheese and green onions and set aside.
  4. Set out flour, eggs, and crushed cereal in three separate bowls.
  5. Scoop out chicken mixture and form 1½-inch balls, rolling in flour, dipping in egg, and coating with cereal.
  6. Repeat until you have about 30 balls.
  7. Place the balls on a baking sheet and bake for 20 to 25 minutes until golden.
  8. Serve with blue cheese or ranch dressing.
