Buffalo Chicken Bites

Ingredients

The chicken mixture

  • 1 lb raw boneless skinless chicken breasts
  • ⅓ – ⅔ cup Buffalo wing sauce
  • ¾ cup shredded 2% reduced fat sharp cheddar cheese
  • ¼ cup crumbled blue cheese
  • 1 bunch scallions, chopped
  • 4 oz 1/3 less fat cream cheese, softened

The coating

  • cup panko crumbs
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with cooking spray.
  2. Boil water in a large pot and cook the chicken breasts for 15-30 minutes until fully cooked, then shred them.
  3. In a bowl, mix the shredded chicken with Buffalo sauce, cheddar cheese, blue cheese, scallions, and cream cheese until combined.
  4. Divide the mixture into 24 portions and roll each into a ball.
  5. In a shallow dish, combine panko crumbs with salt and pepper, then roll each chicken ball in the panko to coat.
  6. Place the coated balls on the baking sheet, spray the tops with cooking spray, and bake for 20-25 minutes until golden brown.
