Ingredients

The chicken filling

  • 2–3 pieces boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • ½ tsp smoked paprika
  • ½ tsp chili powder
  • ½ cup cayenne hot sauce
  • 1 Tbsp butter, melted
  • ½ cup blue cheese crumbles
  • 3 pieces scallions, sliced thinly

The wonton cups

  • 24 pieces wonton wrappers

Instructions

  1. Preheat the oven to 350°F.
  2. Brush chicken breasts with olive oil and season with smoked paprika and chili powder, then bake until cooked through.
  3. Let the chicken cool, then shred it.
  4. Fit wonton wrappers into mini baking cups and bake until lightly browned.
  5. Mix melted butter with hot sauce, then coat the shredded chicken with this mixture.
  6. Fill each wonton cup with the chicken mixture and top with blue cheese.
  7. Return the cups to the oven and bake until the cheese is melted.
  8. Top with sliced scallions and serve warm.
