Ingredients

The filling

  • 2 cups cooked boneless skinless chicken breast, chopped up small
  • 4 wedges Laughing Cow Light Swiss Cheese
  • 3 tablespoons Buffalo wing sauce
  • ½ stalk celery, chopped small
  • 4 oz 2% reduced fat shredded cheddar cheese

The wrappers

  • 16 pieces wonton wrappers

Instructions

  1. Preheat the oven to 375°F and lightly mist a muffin tin with cooking spray.
  2. In a microwavable bowl, combine the chicken, cheese wedges, and wing sauce, then microwave for 1 ½ minutes.
  3. Stir the mixture until the chicken is fully coated with cheese and wing sauce, then add the chopped celery.
  4. Place a wonton wrapper in the bottom of each muffin cup, fill with half of the chicken mixture, and sprinkle half of the cheddar cheese on top.
  5. Add another wonton wrapper on top and repeat the layering with the remaining ingredients.
  6. Bake for 18-20 minutes until golden brown, then let cool for 5 minutes before removing from the muffin tin.
