Chicken Parmesan Wonton Cupcakes

Ingredients

The filling

  • 2 cups cooked boneless skinless chicken breast, diced small or shredded
  • ¾ cup pasta sauce
  • ¾ teaspoon Italian seasoning

The wrappers and cheese

  • 16 pieces wonton wrappers
  • 1 cup shredded 2% Mozzarella cheese

The topping

  • 0.5 oz seasoned croutons, crushed
  • 2 teaspoons grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F and lightly mist a muffin tin with cooking spray.
  2. In a medium bowl, mix the chicken, pasta sauce, and Italian seasoning until combined.
  3. Place a wonton wrapper in each muffin tin cup and fill with half of the chicken mixture.
  4. Sprinkle half of the Mozzarella cheese over the chicken mixture.
  5. Add another wonton wrapper on top and repeat the layering with the remaining chicken mixture and cheese.
  6. Combine the crushed croutons and Parmesan cheese, then sprinkle over the top of each cup.
  7. Bake for 18-20 minutes until golden brown, then let cool for 5 minutes before removing from the tin.
