Chicken Broccoli Alfredo Wonton Cupcakes

Ingredients

The filling

  • 1 ½ teaspoons olive oil
  • 1 cup broccoli florets, chopped small
  • 2 cups cooked shredded or diced chicken breast
  • 1 cup light Alfredo sauce
  • ½ teaspoon Italian seasoning
  • teaspoon black pepper

The wrappers and toppings

  • 24 pieces wonton wrappers
  • 1 ½ cups shredded 2% Mozzarella cheese
  • 1 tablespoon grated Parmesan cheese

Instructions

  1. 1. Preheat the oven to 375°F and lightly mist a standard muffin tin with cooking spray.
  2. 2. Heat olive oil in a skillet over medium heat, add broccoli, and cook for 5 minutes until tender.
  3. 3. Transfer broccoli to a mixing bowl and combine with chicken, Alfredo sauce, Italian seasoning, and pepper.
  4. 4. Place a wonton wrapper in each muffin cup, fill with half of the chicken mixture, and sprinkle with half of the Mozzarella cheese.
  5. 5. Press another wonton wrapper on top and repeat the layering with the remaining chicken mixture and Mozzarella cheese.
  6. 6. Sprinkle ¼ teaspoon of Parmesan cheese on top of each wonton cup.
  7. 7. Bake for 18-20 minutes until golden brown.
