Buffalo Chicken Bites

Ingredients

The chicken and marinade

  • 1 ¼ pound chicken breast, boneless, skinless, cut into 1-inch bite-size
  • 1 cup buttermilk
  • ½ cup buffalo-style hot sauce (Tabasco)
  • 2 large eggs

The coating

  • 1 ½ cup all-purpose flour
  • 2 ounces grated parmesan cheese
  • 1 ½ teaspoons salt
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • ¼ teaspoon baking powder

For frying and serving

  • oil for frying
  • ¼ cup unsalted butter, melted
  • 1 serving ranch dressing

Instructions

  1. Marinate the chicken in a mixture of buttermilk and 2 tablespoons of hot sauce for 2 to 4 hours or overnight.
  2. In a shallow bowl, beat the eggs and set aside. In another bowl, mix the flour, parmesan, salt, garlic powder, black pepper, and baking powder.
  3. Remove the chicken from the marinade, coat it in the flour mixture, dip it in the beaten egg, and coat it again in the flour mixture.
  4. Heat oil in a skillet to 2 inches deep over medium-high heat. Deep-fry the chicken in small batches for 1 to 2 minutes on each side until golden brown and cooked through.
  5. Drain the fried chicken on paper towels. In a bowl, mix the melted butter with the remaining hot sauce, then toss the chicken in the sauce.
  6. Serve immediately with ranch dressing.
