Buffalo Chicken Bites

Instructions
- Marinate the chicken in a mixture of buttermilk and 2 tablespoons of hot sauce for 2 to 4 hours or overnight.
- In a shallow bowl, beat the eggs and set aside. In another bowl, mix the flour, parmesan, salt, garlic powder, black pepper, and baking powder.
- Remove the chicken from the marinade, coat it in the flour mixture, dip it in the beaten egg, and coat it again in the flour mixture.
- Heat oil in a skillet to 2 inches deep over medium-high heat. Deep-fry the chicken in small batches for 1 to 2 minutes on each side until golden brown and cooked through.
- Drain the fried chicken on paper towels. In a bowl, mix the melted butter with the remaining hot sauce, then toss the chicken in the sauce.
- Serve immediately with ranch dressing.
