15-Minute Vegetarian Pasta

The sauce

cherry tomatoes, chopped

grated parmesan (optional)
Instructions
- 1. Cook the pasta in boiling salted water for 8 to 10 minutes until al dente.
- 2. Drain the pasta, reserving ½ cup of the cooking water, and return the pasta to the saucepan.
- 3. In a skillet, heat 1 tablespoon of olive oil over medium-high heat.
- 4. Add the shallots and cook for 3 minutes until golden brown.
- 5. Add the garlic and cook for an additional minute.
- 6. Pour in the red wine and add hot pepper flakes, cooking until the wine evaporates.
- 7. Add the cherry tomatoes and cook for 1 to 2 minutes until the skins begin to crease.
- 8. Combine the tomato mixture, reserved cooking water, and basil with the pasta, mixing well.
- 9. Season with salt and pepper, and serve with grated parmesan if desired.
