Ingredients

The pasta

  • 12 oz pasta of your choice
  • ½ cup reserved cooking water

The sauce

  • 2 tbsp olive oil
  • 2 cloves garlic, finely chopped
  • 2 French shallots finely sliced
  • ¼ cup red wine
  • ¼ tsp hot pepper flakes
  • 3 ½ cups cherry tomatoes, chopped
  • ½ cup fresh basil leaves, chopped
  • to taste salt and black pepper
  • to taste grated parmesan (optional)

Instructions

  1. 1. Cook the pasta in boiling salted water for 8 to 10 minutes until al dente.
  2. 2. Drain the pasta, reserving ½ cup of the cooking water, and return the pasta to the saucepan.
  3. 3. In a skillet, heat 1 tablespoon of olive oil over medium-high heat.
  4. 4. Add the shallots and cook for 3 minutes until golden brown.
  5. 5. Add the garlic and cook for an additional minute.
  6. 6. Pour in the red wine and add hot pepper flakes, cooking until the wine evaporates.
  7. 7. Add the cherry tomatoes and cook for 1 to 2 minutes until the skins begin to crease.
  8. 8. Combine the tomato mixture, reserved cooking water, and basil with the pasta, mixing well.
  9. 9. Season with salt and pepper, and serve with grated parmesan if desired.
