Vegan Garlic Noodles

Ingredients

The noodles

  • 200 g ramen noodles

The sauce

  • 1 tbsp coconut oil
  • 4 cloves garlic, crushed or minced
  • cup green onion, finely chopped
  • 2 tbsp soy sauce
  • 2 tbsp sambal oelek
  • 1 tbsp rice wine vinegar
  • 1 tsp sesame oil

For serving

  • to taste more green onions
  • to taste toasted sesame seeds
  • to taste ginger chili oil

Instructions

  1. Cook the ramen noodles according to the package instructions.
  2. Heat a medium-size pan over medium heat and add coconut oil, garlic, and green onion, cooking for 3-4 minutes.
  3. Add soy sauce, sambal oelek, rice wine vinegar, and sesame oil to the pan, stirring until the sauce thickens.
  4. Transfer the cooked and strained noodles to the pan and cook for 2 minutes, allowing the sauce to absorb into the noodles.
  5. Serve the noodles topped with more green onions, toasted sesame seeds, and ginger chili oil.
